This Valentine’s day Harry and I are going to some shortbread biscuits for Daddy. They are so easy to make. All it takes is 3 ingredients – yes you read that correctly – just 3 ingredients and a little bit of patience. And voila, a superb treat for Daddy to dunk in his coffee. And let’s face it, nothing says I love you more than a gift where some thought and effort has gone in to it.
Harry and I have had a trial run and the results were pretty good. So we will be setting up shop again in the very near future and fingers crossed we will get the same result. If you fancy doing the same then here is the fool-proof way to make them.
What you will need
You will need a food mixer for this recipe. I did try and cream the sugar and butter by hand but gave up when I got cramp. Anyhow, H was quite excited about turning the speed dial on the mixer so I gave in and got it out of the cupboard.
The recipe takes approx. 40 mins of your time for preparation – but don’t let that put you off because 20 mins of that was spent sitting down with a cup of tea and catching up on the previous night’s TV – plus 15 mins cooking time.
Here is what you need and how we made them.
Easy peasy shortbread biscuits
Another great recipe to make with the children because it is so simple and inexpensive. All you need is 3 ingredients - butter, sugar and flour. Simple.
- 125 g butter (room temperature)
- 75 g caster sugar (chopped in to small squares)
- 180 g plain flour
Set the oven to 160C (assuming we all now have a fan oven)
In a food mixer add the butter and approx 50g of the sugar. You will have to stop and start this process to scrape down the mixer attachment so that it is all combined. My son particularly enjoyed this bit as he saw it as an ideal opportunity to indulge in some taste testing. Stop when it resembles a paste/batter consistency.
Then add in the flour and continue to mix. You will know when it is done when it starts to clump around the attachment.
Take the mixture and wrap it in clingfilm. Place in the fridge for approx. 20 mins. This gives you time to clean up stage 1 or in my case I popped the kettle on and had a sit down.
After 20 mins remove the mixture from the fridge. Mould it in your hands for a few minutes (the warmth from your hands just helps to soften it a little to make rolling it easier). Scatter some flour on the work surface and the rolling pin and begin to roll it out. I did mine approx. 5mm thick. They will rise slightly in the oven.
Then cut them in to shape.
Grease a baking tray and line it with greaseproof paper. Place the hearts on to the tray leaving a centimetre or two between them to allow the biscuits to expand.
Place in the over for 15-20 minutes. Keep your eye on them as you want them to be a golden colour but not burned around the edges.
Remove from the oven and sprinkle with the remaining caster sugar.
Decorate as you wish.
A few other suggestions
You could save this shortbread recipe and use it time and again. Just use shape cutters to make them seasonal. For example, a flower shape for Mother’s Day, a tree shape for Xmas, rabbits at Easter. You could jazz them up by using coloured icing to pipe names, messages, and patterns. If you wanted to go that extra mile with the presentation then they look great layered up and tied up with some ribbon.
