Perfect Raspberry Crumble Muffins

From my previous posts you know that I love involving my son in baking.  To be honest he needs no encouragement.  If there is an opportunity to get his hands messy, taste-test the ingredients, and then lick the spoon at the end then he is all up for it.   One of the easiest things to make is muffins.  And so long as you get the muffin mix right it can be used for any muffin recipe.  For this recipe I have gone with raspberries (normally accompanied with a dollop of thick whipped cream).

All you will need is a 12 cup muffin tin and 30 minutes out of your busy day.


Super tasty raspberry crumble muffins. Match the crunchiness of the topping, with the moist inside and the sharpness of the fruit and you have the perfect muffin. Just delicious and so easy to make. Make them with the kids.

Raspberry Crumble Muffins

Servings 12 Muffins


Crumble mix

  • 50 g Plain flour
  • 25 g Caster sugar
  • 35 g Butter

To make the muffins

  • 280 g Plain flour
  • 1 tbsp Baking powder
  • 1/2 tsp Bicarbonate of soda
  • 1 pinch Salt
  • 115 g Caster sugar
  • 2 medium Eggs
  • 250 ml Double cream
  • 6 tbsp Sunflower oil
  • 1 tsp Vanilla extract
  • 150 g Frozen raspberries


To make the crumble mix

  1. Chop the butter up in to little bits as it will make this stage a little easier.   

  2. With your fingers rub together the flour and sugar until it resembles breadcrumbs.

  3. Then stir in the sugar. Set aside.

To make the muffins

  1. Sift the flour, baking powder, bicarbonate of soda, and salt in to a bowl.

  2. Stir in the sugar.

  3. Lightly beat the eggs and then add the oil, cream, and vanilla extract.

  4. Make a well in the dry ingredients and pour it in.

  5. Mix together until just combined.

  6. Pour in to greased and/or lined baking tray and press the crumble mix on to the top of the mixture.

  7. Bake for 20 mins on 200C

  8. Rest in the tin for 5 minutes and then transfer to a wire rack.


You can use this muffin mix recipe time and again and alter the fillings – such as toffee chunks, white chocolate drops, and banana.  Now that’s got me thinking, toffee and banana together…… see you later, I’m off to bake!
